A Volnay family

In the heart of the Côte de Beaune, between Pommard and Meursault, Volnay is renowned for the finesse of its Pinot Noirs. Our family has tended vines here for several generations: each plot tells a story, and each harvest carries on know-how passed down with passion.

We make our wines with respect for the land and for time: Pommard Premier Cru, Volnay, Bourgogne Pinot Noir and Bourgogne Chardonnay, as well as a Crémant de Bourgogne made from our own grapes. Honest, elegant and lively wines, like our family and the terroir that has always inspired us.

How we make our wines

From vine to bottle

  1. Rows of vines during the 2025 harvest, under a cloudy sky

    The harvest

The harvest is above all a key moment of the year, when a whole season’s work comes to fruition. The grapes are picked by hand, and the picking date is chosen with particular care, plot by plot, according to the ripeness of the grapes. Picking by hand lets us sort carefully and preserve the quality of the fruit.

  2. Ripe Pinot Noir bunches under the leaves

    Winemaking

Our winemaking is rigorous and respectful of the grapes. After picking, the bunches are destemmed, then handled so as to preserve aromatic purity and depth of colour. Fermentation starts naturally with indigenous yeasts, under precise temperature control, for a gentle and balanced extraction.

Once the wine is drawn off the skins, each cuvée is aged in oak barrels to refine its structure and expression.

  3. Oak barrels in the cellar at the estate

    Ageing

Barrel ageing is an essential stage, which lets the wine build its structure and gain complexity. At Domaine Albert Boillot, the wines are carefully aged in selected oak barrels to bring out the best in them. The oak adds subtle notes and allows the wine to evolve slowly, refining its structure, texture and aromatic depth, to produce elegant, fine and balanced wines.

  4. Bottling at the estate

    Packaging

Our Pommard, Volnay and Bourgogne wines are bottled at the estate. Packing and order preparation are done on site, by our own team.
